Ways to enjoy matcha

A warm bowl, a cool glass, or a simple dessert. Choose a way to suit your day. Quantities below are starting points for one serving.

Before you begin

Soften the tips of your bamboo whisk in warm water. Warm the bowl, dry it, then sift in the matcha to help prevent lumps.

Usucha

01

Usucha

A light, warm bowl to enjoy the aroma. Suitable for both TORI NO KANADE and SUIKAN.

2g matcha / 60ml water at about 80°C (176°F)

  1. Sift 2g of matcha into a dry bowl.
  2. Add 60ml of water at about 80°C (176°F).
  3. Whisk briskly back and forth for around 15 seconds, until evenly combined. Enjoy freshly prepared.

If it tastes too strong, add a little more water.

02

Matcha latte

Both Tori no Kanade and Suikan are delicious in a matcha latte. Choose by your taste: Tori no Kanade balances umami, astringency and bitterness; Suikan offers rich aroma and mellow umami with little bitterness.

2g matcha / 30ml water at about 80°C (176°F) / 120ml milk / ice / 1–2 tsp (5–10ml) sugar syrup, optional

  1. Sift 2g of matcha, add 30ml of hot water and mix until smooth.
  2. Stir 1 teaspoon of sugar syrup into 120ml of milk, then adjust to taste. You can also leave it unsweetened.
  3. Fill a glass with ice and pour in the cold milk.
  4. Slowly pour the matcha over the ice to create a green-and-white gradient. Stir gently before drinking.

For wasanbon (fine Japanese sugar) or honey, warm a small portion of the measured milk, dissolve the sweetener in it and combine with the remaining milk. For a hot latte, use warm milk and omit the ice. Oat milk and other alternatives work too. SUIKAN is also a lovely choice.

Iced matcha

03

Iced matcha

Cool and refreshing, with the umami of SUIKAN or the gentle bitterness of TORI NO KANADE.

2g matcha / 60ml water at about 80°C (176°F) / ice / 1 tsp (5ml) sugar syrup, optional

  1. Sift 2g of matcha and whisk with 60ml of hot water, as for usucha.
  2. For a little sweetness, stir in 1 teaspoon of sugar syrup.
  3. Put ice in a heat-resistant glass, pour in the matcha and stir gently to chill.
  4. Adjust the sweetness to taste and enjoy before the ice melts too much.

Wasanbon, a fine Japanese sugar, or honey also work. Add a little to the warm matcha and dissolve before adding ice. Enjoy unsweetened if you prefer a refreshing, pure matcha flavour.

Matcha over ice cream

04

Sprinkle matcha

Sprinkle either Tori no Kanade or Suikan over vanilla ice cream. Start with a little and explore the flavour you enjoy.

About 100g vanilla ice cream / 0.5–1g matcha

  1. Scoop vanilla ice cream into a small dish.
  2. Just before serving, lightly sift matcha over the top.
  3. Start with a little powder and add more to suit your taste.

Enjoy with either blend. Sprinkle the dry powder directly; no hot water is needed.

Koicha, kneaded without foam
Recommended for koicha: SUIKAN →

05

Koicha

For a more concentrated taste of SUIKAN. We recommend SUIKAN for this rich, thick preparation.

4g SUIKAN / 30ml water at about 80°C (176°F)

  1. Warm and dry your bowl, then sift in 4g of SUIKAN.
  2. Gradually add 30ml of hot water and gently knead with a bamboo whisk.
  3. When smooth and glossy, enjoy slowly in small sips. Avoid whisking into foam.

Koicha uses more powder in proportion to water than usucha. If you are new to matcha, a bowl of usucha is a welcoming place to begin.

Keeping your matcha

Follow the storage instructions on the tin. Keep away from heat, moisture, direct sunlight and strong odours. Use a clean, dry spoon, close the lid after use and enjoy soon after opening.
